Lactarius

Lactarius salmonicolor.


  Lactarius is a genus of about 400 species of mushrooms that emit a milky fluid (usually white or orange) when their gills are broken. The name of this genus is derived from the Latin word for milk, "lac". "Milky caps", as they are commonly known, often have a slightly concave or funnel-shaped cap with concentric color zones. Their gills are usually crowded, their stipe is short and ringless, and their flesh is firm.

Lactarius piperatus is a rather common white-colored mushroom (up to 15cm) appearing in early summer and fall, usually in deciduous forests. When cut, it exudes a white milky fluid that has an acrid peppery taste. It is a low quality edible mushroom, with a very firm and tough flesh, that looks very similar to Russula delica.

Three of the most prized edible species in this genus are the orange colored L. deliciosus (up to 20cm), L. salmonicolor (up to 20cm), and L. deterrimus (up to 10cm). They are very similar, and they all emit a carrot-orange fluid when cut. They are also found growing in coniferous forests, in fall, the first one in pine forest,s and the other two in spruce-fir forests.

Lactarius chrysorrheus is one of the relatively smaller (up to 10cm), non-edible/toxic milky-caps, that usually grows in deciduous forests. The cap is flesh-pink to orange-brownish, the gills are creamy colored, and the emitted fluid is white turning yellow after a few minutes.

  Το γένος Lactarius περιλαμβάνει 400 περίπου είδη μανιταριών τα οποία εκκρίνουν έναν γαλακτώδη χυμό όταν τα ελάσματά τους κοπούν. Το όνομα προέρχεται από την λατινική λέξη για το γάλα, "lac". Οι λακτάριοι έχουν συχνά ένα κοίλο ή χωνιόμορφο καπέλο με ομόκεντρες χρωματικές ζώνες. Τα ελάσματά τους είναι πυκνά, το πόδι κοντό και χωρίς δαχτυλίδι, και η σάρκα τους σκληρή.

Ο Lactarius piperatus είναι ένα σχετικά κοινό λευκό μανιτάρι (έως 15εκ), το οποίο εμφανίζεται αρχές καλοκαιριού και φθινόπωρο, συνήθως σε φυλλοβόλα δάση. Όταν κοπεί, εκκρίνει έναν λευκό γαλακτώδη χυμό ο οποίος έχει έντονα καυτερή γεύση. Πρόκειται για ένα χαμηλής ποιότητας εδώδιμο μανιτάρι, με πολύ σκληρή και ανθεκτική σάρκα, το οποίο μοιάζει πολύ με την Russula delica.

Τρία από τα πιο αξιόλογα εδώδιμα είδη αυτού του γένους είναι οι L. deliciosus (έως 20εκ), L. salmonicolor (έως 20εκ), και L. deterrimus (έως 10εκ), οι οποίοι έχουν έντονο πορτοκαλί χρώμα. Παρουσιάζουν μεγάλη ομοιότητα, και όλοι τους εκκρίνουν έναν πορτοκαλί-καροτί χυμό όταν κοπούν. Εμφανίζονται το φθινόπωρο σε κωνοφόρα δάση, κάτω από πεύκα ο πρώτος, και κάτω από έλατα κυρίως οι δύο τελευταίοι.

Ο Lactarius chrysorrheus είναι ένα από τα σχετικά μικρότερα (έως 10εκ) είδη μη-εδώδιμων/τοξικών λακτάριων, ο οποίος φυτρώνει συνήθως σε φυλλοβόλα δάση. Το καπέλο του είναι ρόδινο πορτοκαλί-καφέ, τα ελάσματα υπόλευκα, ενώ ο χυμός που εκκρίνει είναι λευκός και γίνεται κίτρινος μέσα σε λίγα λεπτά.

Boletus (III)

Juicy Suillus collinitus.


  The majority of boletes appear mainly in deciduous forests, but there are some species that prefer coniferous forests. The ones that are particularly connected to pine trees belong to genus Suillus, and one of their distinctive features seems to be their sticky and slimy leathery caps, hence their common name "slippery jacks". The name Suillus is derived from the Latin word for pig, "sus".

Suillus collinitus, also known as Boletus collinitus, is a pored mushroom restricted to pine forests, where it appears in large numbers after heavy rainfall in autumn. The brown cap (up to 15cm) is very sticky and slimy, and it's skin is peeled off easily for cooking. The spongy pores are bright yellow turning to olive green in maturity, and the very soft, juicy and somewhat translucent flesh is also yellow. This is a mushroom that is too often attacked by maggots in maturity, so only young and healthy specimen should be picked.

Closely related species are Suilus luteus (ring bearing, up to 15cm) and Suilus granulatus (up to 10cm).

  Οι βωλίτες στην πλειοψηφία τους εμφανίζονται κατά κύριο λόγο σε φυλλοβόλα δάση, υπάρχουν όμως κάποια είδη που δείχνουν προτίμηση στα δάση κωνοφόρων. Εκείνα που κατά έναν ιδιαίτερο τρόπο συνδέονται με τα πευκοδάση ανήκουν στο γένος Suillus, με κύριο χαρακτηριστικό τους γνώρισμα τα κολλώδη και γλυστερά καπέλλα τους. Το όνομα Suillus προέρχεται από την λατινική λέξη για το γουρούνι, "sus".

Ο  Χοίριος ο ιξώδης, Suillus collinitus, γνωστός και ως Boletus collinitus, είναι ένα είδος βωλίτη το οποίο απαντάται το φθινόπωρο αποκλειστικά σε πευκοδάση, συνήθως σε μεγάλους αριθμούς μετά από έντονες βροχοπτώσεις. Το καφετί καπέλο (έως 15εκ) είναι πολύ κολλώδες και υγρό, και η δύσπεπτη επιδερμίδα του αφαιρείται εύκολα πριν το μαγείρεμα. Οι σπογγώδεις πόροι έχουν ένα λαμπερό κίτρινο χρώμα που γίνεται καφετί στην ωριμότητα, ενώ η απαλή, ζουμερή και σχεδόν διάφανη σάρκα του είναι και αυτή κίτρινη. Πρόκειται για ένα είδος μανιταριού που προσβάλλεται εύκολα από σκουλήκια, γι αυτό χρειάζεται προσοχή να συλλέγονται μόνο τα νεαρά και υγιή μανιτάρια.

Μεγάλη ομοιότητα παρουσιάζουν ο Suilus luteus (έως 15εκ), ο οποίος φέρει διακριτό λευκό δαχτυλίδι, και ο Suilus granulatus (up to 10cm).
