  Scolymus hispanicus is one of the three thistle-like plants in the genus Scolymus, native to the Mediterranean region and western Europe. Commonly known as Golden Thistle (or Spanish Oyster Thistle), this beautiful biennial or short-lived perennial plant forms a thorny, dark green shrub that produces an abundance of stunning egg-yolk yellow, daisy like flowers (end of spring to early summer). The young plants are often harvested and cooked, especially in Spanish and Cretan cuisine.
Closely related is Scolymus maculatus, with a more erect stem structure and very beautiful, distinctive spiny bracts around the flowers. In Greece this species seems to be restricted to a few southern islands, whereas Scolymus hispenicus is very widespread and quite common.

  Ο Σκόλυμος ο Ισπανικός, Scolymus hispanicus, είναι ένα από τα τρία είδη ακανθωδών φυτών του γένους Scolymus, ενδημικών της Μεσογείου και της δυτικής Ευρώπης. Αυτό το πολύ χαρούμενο διετές ή και πολυετές φυτό, σχηματίζει έναν εντυπωσιακό αγκαθωτό σκουροπράσινο θάμνο, ο οποίος παράγει άφθονα κατακίτρινα λουλούδια με κροκί καρδιά που μοιάζουν με μαργαρίτες, τέλη άνοιξης με αρχές καλοκαιριού. Τα νεαρά φυτά συλλέγονται και μαγειρεύονται, ιδιαίτερα στην Ισπανική και την Κρητική κουζίνα.
Μεγάλη ομοιότητα παρουσιάζει ο Scolymus maculatus, ο οποίος διακρίνεται από τους πιο όρθιους βλαστούς και τα πολύ όμορφα και χαρακτηριστικά ακανθώδη βράχτια γύρω από κάθε λουλούδι. Στην Ελλάδα το είδος αυτό περιορίζεται απ΄ ότι φαίνεται σε λίγα νησιά στο νότο, ενώ ο Scolymus hispenicus είναι φυτό ιδιαίτερα διαδεδομένο και αρκετά συχνό.
